‘WAGYU’ refers to all Japanese beef cattle, where ‘Wa’ means Japanese and ‘gyu’ means cow.

Wagyu meat comes from a group of breeds revered because of incredibly high level of fat marbling. Marbled meat is meat that contains various amounts of intramuscular fat, giving it an appearance similar to a marble pattern.

While the best Western beef has white streaks, Japanese wagyu is more fat than flesh, a slab of white with a splattering of pink.

The Australian Wagyu Association is the largest breed association outside Japan. Both full-blood and Wagyu-cross cattle are farmed in Australia for domestic and overseas market. Australian Wagyu cattle are grain fed for the last 300–500 days of production.
