INGREDIENTS
SPONGE CAKE
✔️ 2 tbsp. Coconut Flour (You can purchase this online from Nutrifinds via Lazada)
✔️ 1 Egg
✔️ 1/2 tsp. Baking Powder
✔️ 1 tsp. Vanilla Extract
✔️ 1 tbsp. Coconut Oil
✔️ 3-5 tbsp. All Purpose Cream
✔️ Low Carb Sweetener Substitutes like Erythritol , Stevia or Equal Gold. (Click hyperlinks to order online from Lazada)
YEMA FROSTING
✔️ 3-5 tbsp. All Purpose Cream
✔️ LC Sweetener Substitute
✔️ Vanilla Extract
✔️ 1 Egg Yolk or Unflavored Gelatin Powder
✔️ Grated Ques-O Cheese as toppings
PROCEDURE:
1. Combine all dry ingredients – Coconut Flour, Baking Powder and Low Carb Sweetener, and mix well.
2. Add the wet ingredients starting with the egg, vanilla extra, coconut oil and All Purpose Cream. Mix well and set aside.
3. Place the mug with the cake mixture inside the microwave and bake for about 3-5 minutes.
4. While the cake is cooking let’s make the yema frosting. In a saucepan combine All Purpose Cream, Sweetener Substitute and Vanilla Extract and Egg Yolk or Unflavored Gelatin Powder.
5. Mix well and cook on low medium heat.
6. Stir constantly to avoid lumps.
7. When the yema mixture is already thick turn the heat off and let it cool.
8. Take out the mug cake from the microwave.
9. Un-mold the cake and cool completely before frosting.
10. Pour yema mixture on top of the cake and spread evenly until it covered the whole cake.
11. Cover with grated cheese on top and on the side.
12. Chill for at least two hours before serving.
